HAPPY BIRTHDAY, JANICE !!!


on friday henrik and i celebrated janices birthday with her favorite cake. carrot cake.
i am not the biggest fan of carrot cake,but i liked this one a lot. the best part about it was the philadelphia cream cheese frosting made out of half a package of philadelphia,2 tablespoons of melted butter, one cup of icing sugar and a little lemon juice.
the cake was great, but eating it without the birthdaygirl was a little sad.
i miss you,janice!! happy birthday again!

field trip

im happy about being a schoolgirl again. i got placed in a class that has been studying together for a long time,but that´s alright because everyone there is really friendly. i got to skip the first half year of SFI, so now i have to catch up on grammar myself. but i guess this solution is still the best, i´d rather work a little extra on my grammar than be stuck in a beginners class. i understand too much swedisch for that and the swedish that i can already speak sounds too good,too :)
today we went on a fieldtrip and learned a little about gothenburgs history and some buildings and monuments. we also went into a really cool chocolate store, i think i want to take alex there when he comes for a visit next week. NEXT WEEK ALREADY, WOO HOO !!!!

baka baka liten kaka


today my mom emailed me a recipe for a fruit cake that she loves.
since henrik and i can´t finish a whole cake, i divided the recipe by 3 and ended up with enough dough for two of my miniature cake forms. the little cakes looked so yummy,we didn´t even wait for them to cool down...
here the recipe for one regular sized cake :

260 grams of full fat cream
150 grams of sugar
2 tablespoons of vanilla sugar
3 eggs
300 grams of all purpose flour
1.5 teaspoons of baking powder
2-3 cups of chopped up or small fruit

for the streusel topping:

150 grams of all purpose flour
60 grams of sugar
1 tablespoon of vanilla sugar
100 grams of margarine or butter


whipp cream,sugar and vanilla sugar until almost stiff. mix in one egg at a time.
add baking powder to flour and blend this mixture into the other ingredients.
pour batter into greased baking dish of choice (for example springform).
top with fruit.
mix streusel topping ingredients until crumbly and sprinkle on top of the fruit.

bake at 200 degrees celcius for 45 min.
remove from cakeform after letting the cake cool for 30 min.

spinach artichoke dip


this was my first attempt at making a spinach artichoke dip. we enjoyed it,but i have an idea for making it even better next time.
i mixed together 200 grams of drained and finely chopped artichoke hearts, 150 grams of chopped,thawed and drained spinach, 1 deciliter grated parmesan, 1 deciliter mayo, 1 deciliter shredded mozarella, 1/2 of a teaspoon of garlic powder and some salt and black pepper. the mixture needs to be baked in an ovendish for 20-25 min at 175 degrees celcius.
i think next time i will use sour cream in stead of mayo and add some philadelphia creamcheese as well. that should make it even more creamy.
the dip can be served with a gazillion different things, we went for sliced bread,chips and carrot sticks. YUM !!

vi har en ny soffa. and henrik and the delivery guy did an awesome job carrying it up here. what a great beginning of the weekend !!

MEINE HAMSTER-SCHULTUETE


today was my first day of school at SFI (swedish for immigrants) and that´s why i got the cutest surprise from henrik. german kids get a "schultuete" for their first day of school,stuffed with candy and little gifts. henrik made me one out of green paper with a hamster-face and it was full of awesome school supplies and candy. thank you again sweets !!
the biggest challenge today was FINDING the school :) i left here an hour before class and made my way through a snowstorm, a map of gothenburg in my freezing hands...
i made it there on time and sat through an hour of introduction with my new classmates. not only was i the only german girl in the classroom, i was also the only blond person and one of the few girls who wasn´t wearing a muslim headscarf.
i´m hoping that my swedish will improve rapidly now, 3 hours of school per day plus homework schould do the trick.
maybe one day i will switch this blogg to swedish...

one day late...


yesterday was "fettisdagen" here is sweden and it´s a tradition to eat one SEMLA or lots of SEMLOR that day. the supermarkets and bakeshops here have been selling semlor for lots and lots of weeks though, so i got used to looking at them every day and i lost track of time and didn´t bake my own on fettisdagen. it would have been sad for henrik and me to miss out on semlor this year, so i decided to bake a couple today - better late than never.
i ate one right after i was done baking and i must say they turned out great. the rest are waiting in the fridge and will be for dessert tonight.
for those of you who have never had a semla :
a semla is a fluffy doughball,not too sweet,with a hint of cardamom. it is filled with marzipan and whipped cream. the top is dusted with powdered sugar.
next year i will make sure to bake them on the right day and i will post a recipe in time for you to make your own,too. if you can´t wait and want the recipe now just email me :)
